How do I make beer?

“I make beers inspired by a memory, atmosphere and feeling. The Scotch Ale was inspired by a trip to Belgium to see my daughter. To me, it tastes like sitting in Delirium Café in Brussels after an entire day of touring breweries and cathedrals with Emily.”

“Or I’ve made beers based on a specific flavor or style, and build the recipe with that in mind, knowing exactly how I believe it should taste. I choose ingredients that bring out the notes I want. Some recipes are complicated, while others are simple. My simpler recipes attain complexity from special brewing techniques. They are all multi-dimensional in taste regardless of their recipe.”

We are open from 11:30am to 8pm Tuesday, Wednesday, Thursday, Saturday, and Sunday.
Fridays until 8:30. We are closed on Mondays.

Caraway Seed Crusted Pork Loin with Bavarian Apple Cream Sauce, Red Cabbage and Potato Pancakes

Creamy Tomato Basil Soup-
Shallots and garlic sautéed in red wine with whole tomatoes in a vegetable stock. Finished with chiffonade fresh basil cream. Topped with fried cheese curds.

For Friday Fish Fry at Council Rock Brewery 3 pm to 8:30 pm. Takeout is also available.

Call volume is very high on Fridays. Please be patient and call again.
10-12 oz Haddock filet fried in our Goldenrod Ale batter, served with coleslaw and your choice of fries, mashed potatoes or broccoli. Reservations are suggested.

Goldenrod Ale- A golden cream ale-usually our lightest offering. 4.6% abv

Mango Wheat- This beer starts out as an American style wheat beer and then we load it up with real mango! Slightly tart and not overly sweet, with big mango taste and plenty of “real beer” flavor. 5.9% abv

Oktoberfest- A malty, German Marzen style; this beer is full of caramel malt flavors. With just enough hoppiness and a clean finish, it is the perfect way to celebrate the season. 6.5% abv
California Common Lager- A "steam beer" (where lager yeast is utilized at warmer temperatures for fermentation) that blends a restrained malt flavor with the pine and minty aromas of Northern Brewer hops and finishes with lager smoothness. 5.1% abv

Full Nelson- A pale ale brewed with the Nelson Sauvin hop from New Zealand. Late additions and dry hopping produce distinctive tropical fruit aromas in an ale that is aromatic but not as bitter as an IPA. 25 IBU 5.1% abv

Golden Oasis Session IPA- A hazy session IPA, with flavors of mango, pear, lemon and cherry. Has a touch of hop bitterness, easy drinking. 58 IBU 3.1% abv

All American IPA- Generally our hoppiest beer, brewed with 3 American West Coast hops: Columbus, Chinook, and Citra. It is also dry hopped with Citra. A complex and balanced IPA. 7.0% abv

Farmers’ Harvest IPA- Brewed with fresh whole leaf wet hops from the Farmers’ Museum. It is an old fashion IPA version of the Farmers Harvest, aggressively hopped with Fuggles, resulting in a beer with upfront bitterness. 5.0% abv

Ruby Saison- A semi-traditional Saison, amber color, with malty notes of caramel. Dashed with traditional spiciness of the Saison yeast. 5.9% abv
Belgian Spiced Quad- A heavy caramel boosted Abbey style Quad
with a hint of spice. 11.9% abv**
