How do I make beer?

“I make beers inspired by a memory, atmosphere and feeling. The Scotch Ale was inspired by a trip to Belgium to see my daughter. To me, it tastes like sitting in Delirium Café in Brussels after an entire day of touring breweries and cathedrals with Emily.”

“Or I’ve made beers based on a specific flavor or style, and build the recipe with that in mind, knowing exactly how I believe it should taste. I choose ingredients that bring out the notes I want. Some recipes are complicated, while others are simple. My simpler recipes attain complexity from special brewing techniques. They are all multi-dimensional in taste regardless of their recipe.”

Fridays we are open from 11:30 to 8:30.

Curry Veggie Burger-Grilled Veggie burger with our house made special slaw topped with curry aioli. Served on a toasted brioche bun.

Creamy Tomato Basil Soup-
Shallots and garlic sautéed in red wine with whole tomatoes in a vegetable stock. Finished with chiffonade fresh basil cream. Topped with fried cheese curds.

Knockwurst- Served with our house-made German potato salad, red cabbage and Bavarian Mustard.
Cod Filet-Fried Cod with greens, served with tartar sauce on a toasted brioche roll.

Council Rock Brewery's Taco Tuesday-All day we will be serving our Fish Tacos, Shrimp Tacos, Southwestern Tacos and Curry Veggie Burger Tacos!! Our 3 taco Sampler is also available! Don’t forget the Margaritas and Kyle's Apple Pie drink!!
