How do I make beer?

“I make beers inspired by a memory, atmosphere and feeling. The Scotch Ale was inspired by a trip to Belgium to see my daughter. To me, it tastes like sitting in Delirium Café in Brussels after an entire day of touring breweries and cathedrals with Emily.”

“Or I’ve made beers based on a specific flavor or style, and build the recipe with that in mind, knowing exactly how I believe it should taste. I choose ingredients that bring out the notes I want. Some recipes are complicated, while others are simple. My simpler recipes attain complexity from special brewing techniques. They are all multi-dimensional in taste regardless of their recipe.”

Witty Logger, Eh?- A crisp Belgian style wheat beer, lightly flavored with bitter orange peel, coriander, and white pepper. Fermented cool and aged near freezing, leaving a smooth and easy drinking hybrid brew. 7.6% abv

Pina Colada Gose- Lightly sour wheat beer with a slight saltiness and flavors of pineapple and coconut. 5.6% abv

NY Biere de Garde- Brewed with NY hops and NY malts and fermented with very locally sourced wild “farmhouse” yeast that gives the brew a complex, earthy flavor. Has a hint of sourness that will increase as the
beer ages. 4.8% abv

Sleeping Lion Red Ale- A hoppy, full flavored red ale. We add a double dose of Cascade Hops at the beginning and end of the brewing process. We also employ a technique called “Mash Hopping” where we add fresh, whole-leaf Cascades from New York State to the barley mash. 5.3% abv

All American IPA- Generally our hoppiest beer, brewed with 3 American West Coast hops: Columbus, Chinook, and Citra. It is also dry hopped with Citra. A complex and balanced IPA. 6.7% abv

Full Nelson- A pale ale brewed with the Nelson Sauvin hop from New Zealand. Late additions and dry hopping produce distinctive tropical fruit aromas in an ale that is aromatic but not as bitter as an IPA.
25 ibu 5.6% abv

Clinton’s Cannon English Ale- Toffee, chewy malt with a big hop flavor. 7.5% abv
Oatmeal Stout- A rich dark beer, full of roasted, chocolate and coffee flavors, but less bitter than most stouts. 8.2% abv
Spiced Porter- A moderate London style Porter, heavily spiced for the Holiday Season. 6.1% abv
Sunken Island Scotch- A rich, brown, strong "120-shilling" Scottish style ale; full of malt and caramel flavor, a little raisiny with just the right amount of sweetness. 11.2% abv*
